This recipe was so good! You’ll need two cans of black beans, oil, garlic, chopped tomatoes, vegetable broth, onions, spices, and sugar. Feel free to top this stew with avocado, parsley, rice, or quinoa!
Easy vegan falafel on pita bread
I absolutely LOVE falafel. It’s one of my favorite things to make and I love trying different variations of it. To make this recipe, you’ll need chickpeas, parsley or cilantro, garlic, shallots or white onion, finely chopped nuts (I used walnuts), spices, flour, oil, optional bread crumbs, and hummus (for topping). I served mine on garlic pita bread with lettuce, tomatoes, and hummus. Delicious!
This was probably our favorite dinner of the week! We served the enchiladas with Daiya Pepperjack Cheese (vegan) and Tofutti vegan sour cream. To make the recipe, you need tortilla shells (large enough for rolling), oil, onion, garlic, black beans, spices, tomato sauce, cilantro, and jalapeno (I left it out). I also added a little extra tomato sauce than the recipe required.
When we made this meal, the weather was starting to cool down and it was a rather rainy week, so it was the perfect time for soup! To make this easy recipe, you’ll need carrots, celery, onion, garlic, red potatoes, spices, spiral noodles, two vegan bouillon cubes, and nutritional yeast (optional but a nutritional addition!).
This recipe was easy to make and was absolutely delicious. All you need is one block of tofu, olive oil, mild or hot green chilies (I left them out), BBQ sauce, tamari or soy sauce, mustard, spices, sandwich rolls, and toppings. So good and perfect for an easy Friday dinner!
Frozen veggie burgers
Sometimes you just want to kick back and enjoy a quick and easy dinner. That’s what we did for this meal. Boca vegan burgers on toasted bread with sliced tomato, lettuce, ketchup, mustard, and Just Mayo. Mmmm…
Quesadillas with black beans and cilantro rice
This is one of the first vegan recipes I ever created on my own, and it’s still one of my favorites! All you need are four large flour tortillas, salsa, chopped tomato, one can of black beans, one container of hummus, and one diced onion. I love dipping mine in salsa and Tofutti sour cream. Mmm!
First, preheat the oven t0 350 degrees. Place two of the tortilla shells on a large baking sheet and slather hummus on the inside of each tortilla shell, and then top the two shells with tomatoes, salsa, onion, and black beans. Slather hummus on one side of the remaining two taco shells and place the shells on top of the other two shells. Press down so they stick together. Pop them in the oven and bake for about 30 minutes or until crispy. When done, use a pizza cutter to cut each shell into fourths. I like to serve mine with a side of cilantro rice. Yum!
