Your Week of Vegan Dinner Ideas + Recipes

If you’re new to plant based, vegan food and meal planning, or if you’re looking for help with planning your plant based dinners, then I’ve got you covered! Here are seven days of vegan dinner ideas for you and your family to enjoy this week.

Creamy chili sauce with zucchini, spinach, and pasta

This recipe was so yummy! All you need is elbow pasta, veggie broth, chopped onion, 2 small zucchini, homemade cashew milk or coconut milk (I used canned coconut milk), tomato sauce, spices, and spinach. Yum yum yum!


Crispy tofu fillet with roasted broccoli and carrots

This is one of my favorite tofu recipes. I always serve it with Hampton Creek’s Awesomesauce which is a vegan and non-dairy tartar sauce. Yum! To make it, you’ll need one block of extra-firm tofu, soy creamer or almond milk (I used almond milk), mustard, spices, flour, panko bread crumbs, and oil (for frying). I served it with roasted and chopped broccoli and carrots, drizzled with olive oil and sea salt. 


Black bean tacos with cilantro rice

I know I say this a lot, but this really is one of my favorite meals! It’s so delicious with Tofutti non-dairy sour cream, salsa, and avocado! To make the recipe, you need rice, cilantro, lime juice, and sea salt for the cilantro rice. To make the tacos, you need tortillas, two cans of black beans, salsa, cumin, avocado, cilantro, lime juice, garlic, olive oil, agave, and sea salt. Don’t forget your other toppings, like lettuce, tomato, onion, corn, or any other plant-based option else you choose!


Curry lemon quinoa with dinner rolls

We had this meal served with dinner rolls and Earth Balance. It was so simple to make! You’ll need quinoa, oil, cilantro, cashews, lemon juice, green onions, and spices such as turmeric, curry powder (or curry leaf), paprika, mustard seeds (optional), and sea salt. 


Pulled jackfruit sandwiches

This is a recipe for you to go off of (I know I’ve shared it plenty of times before, but it’s amazing), OR you can simply sautee one chopped onion in about a tablespoon of olive oil and then add one can of jackfruit to the pan. Break the jackfruit apart so it looks a bit shredded. Then add about a cup of your favorite vegan barbecue sauce and cook through so it thickens a bit. Serve on bread or buns with tomato, Just Mayo, and avocado. Soooo good and absolutely perfect for a relaxed Friday evening. 


Gardein pizza pockets

Neither of us felt like cooking on Saturday night so we tried these new Gardein pizza pockets that we found at the store. They were so tasty! 


Spaghetti with vegan meatballs

Mmmm, this meal was simply amazing. I used this recipe for the meatballs but I made my own sauce. To make my sauce with the spaghetti, you’ll need one package of spaghetti noodles of your choice, one large can of crushed tomatoes, chopped onion, one tablespoon of brown sugar, and one package of frozen Boca garden crumbles. Simply sautee the onion in olive oil and then add the crushed tomatoes, brown sugar, and Boca crumbles to a pan and combine. Simmer until heated through and the vegan meatballs are ready to be eaten. 

To make the vegan meatballs, you’ll need one chopped onion, minced garlic, flaxseed meal (to make a flax egg), 8 ounces of tempeh or chickpeas, bread crumbs, and oil. You can also choose to make the vegan parmesan cheese in the recipe, or sub nutritional yeast.
